Two Ingredient Buffalo Chicken

I finally made it to the gym today and ran a whole mile… Yeah, kind of pathetic.  I guess that’s pretty good for not running in about 2 months.

The good thing about the gym in my apartment complex is that it’s generally very empty, so I tend to have the place to myself. 🙂



I am going to start lifting weights as well as running again. I’m not going to lift weights like a dude, but just to get some strength! I have really weak shoulders and arms. Actually, they’re so weak that it affects my piano playing. The weakness in my shoulders makes it easier for me to get things like carpal tunnel and tendonitis. 😦 I need to keep getting those areas stronger!

Today, a simple dose of cinnamon made my lunch really, really GOOD…

I had a salad with spinach leaves, cucumber, feta cheese, grape tomatoes, & carrots. I also had peanut butter & an apple on top of whole wheat bread. I added cinnamon to the top which was incredible. It really made the apple + peanut butter combo even better.

Now, for a TWO INGREDIENT DINNER! Don’t ya love those?

Tonight I had…

Two Ingredient Buffalo Chicken

Here are the stars…

To make this…
1. Put two chicken breasts in the oven at 400 degrees for 20 minutes.
2. Once the chicken is done, use your fork to shred the chicken apart.
3. Put the chicken in a bowl. Add 1 tablespoon of Buffalo Red Hot Wings sauce and 1 tablespoon of Parmesan Cheese and mix it around.
4. Put your chicken on some bread and dinner is served!



Yum! Don’t you love easy and delicious dinners like this?

Tomorrow morning my goal is to exercise BEFORE class… Do you think I can do it this time?

We will see… 😉
